I have always loved Italian food… especially spaghetti and meatballs
The comfort of a rich tomato & herb marinara sauce, poured over a bowl of noodles, topped with savory meatballs and fresh grated parmesan cheese was a childhood favorite
When I made the change to eating a gluten-free diet, it seemed like I would never again be able to enjoy a meal like that. It pained me to see friends order and eat freely at restaurants, while I ordered from the limited selection of “gluten sensitive” items while secretly wishing I could order what I really wanted.
Even though some Italian restaurants now serve gluten-free pasta, I had NO IDEA that meatballs usually contain wheat flour, which is used as a binding agent, making the meatballs more tender and savory.
So I set out on a mission to create my own meatballs recipe - one that everyone could enjoy and that no one would ever know they are made without gluten - because they are so delicious!
This one is a real crowd pleaser, and it can be on the dinner table in under an hour!
I love simmering these in marinara sauce and serving them over zucchini noodles or brown rice pasta with a touch of grated parmesan cheese 🍝
