DELICIOUS GRAIN-FREE WAFFLES

I love food, and I love breakfast!

I’ve always had a sweet spot for waffles and pancakes. Because I’m not able to eat wheat, I figured out how to make my own healthy, gluten-free version using oat flour. My oat flour pancakes and waffles have become a family favorite, and we all agree they taste 1000 times better than store bought waffles. Not to mention, it’s nearly impossible to find gluten-free store bought waffles that are made without cassava, or canola oil.

Perfect for the Daniel Fast or Microbiome Restoration Protocol

However, I recently committed to doing the “microbiome restoration protocol” from the book “His Ways for Health”, and unfortunately, my famous oat flour waffles were not allowed on the protocol.

Being a creative and pragmatic person, I set out to find a different waffle recipe that I could enjoy occasionally during my 6-week commitment to eating no grains, no sugar, and no dairy, among other things.

Buckwheat flour is made from the seeds of the flowering buckwheat plant

It is not related to wheat, despite “wheat” being part of it’s name. It is naturally free from gluten, and it’s consistency makes it simple to work with when baking. The flavor profile is somewhat nutty, and slightly bitter, in my opinion.

Because of the slightly bitter flavor of buckwheat, I decided to adapt a recipe I found online to include almond flour, which has a naturally sweet and mild flavor. The addition of almond flour also gives these waffles a delicious slightly crispy texture. It’s important to add psyllium husk powder to this recipe as a binder. Although I’ve only included 1/8 teaspoon psyllium husk in this recipe, don’t skip it, or you may end up with a runny mess of batter! This recipe contains apple cider vinegar and baking soda, which imparts a fluffy texture to the waffles.

Lastly, be sure to spray your waffle iron generously with coconut oil cooking spray to prevent sticking. If you don’t have a waffle iron, no worries, as this recipe also makes pancakes!
